Too much washing, paring, chopping for salads. I do it but not as often as I'd like. You're very lucky your hubby does it for you!

Yeah, it is his specialty! He puts in so much stuff! He will spend 30 mins making the salad. Sometimes more. Gotta love him for that. Sometimes I cheat and buy them already made at the Jewel Razz

I don't know if you guys have a Woodman's out by you, but they have a HUGE organic isle at ours. My oldest son loves to shop there.

Oh how sweet! I will tell him you said that! Too bad you don't have a Woodman's. They are huge! They have more fruit, veggies, cheeses, meats, pizzas etc. than I have ever seen in one place before! They are employee owned and their prices are great!

With Cereal almost 5 Bucks a box I thought I would share a granola recipe . I love granola but wasa frustrated at the price and some of the artificial stuff in it. I've made this two weeks in a row ,it is delish.

Quote:
2 cups rolled oats (not instant)
1 cup peanuts or toasted almonds
1/4 cup sesame seeds
1/2 cup toasted sunflower seeds
1/2 cup coconut (I always use unsweetened, but you can go for the sweetened kind if you'd like)
1/4 cup toasted wheat germ (I often omit this ingredient, as I tend to forget to buy it)
1/2 cup raisins
1/2 cup dried fruit (dried apricots, craisins and dried apple are all delicious choices)
scant 1/4 cup cooking oil (not olive)
1/2 cup honey

Mix the oat, nuts and grains in a large bowl. Measure oil into the measuring cup and swirl it around before pouring into bowl. Then measure out the honey in the same, unwashed cup. The oil will help the honey exit the cup. Toss everything together until evenly coated and then pour out into a baking pan. I use a large roasting pan, as it keeps everything contained. A cookie sheet with a lip also works, but you have to stir it slightly more carefully if you use that. Bake at 300 degrees for 30 minutes, turning it with a spatula every ten minutes or so. You want everything to be an even golden brown. When it is finished cooking, returned the baked granola to the mixing bowl, add the raisins and fruit and stir to combine. Stir gently several times as it cooks, so that it doesn't clump together too much. Enjoy!

I put about a tbs. of vanilla in with honey. You can add anything you like to it. Dates, chocolate chips , etc.

Wow! That sounds great!

I get my cereal and granola bars at Walmart and pay a lot less than $5. I can get a lot of the brands we like for $2.58-$2.98.

See though I buy organic because I avoid High Fructose Corn Syrup , and partially hydrogonated oils. That is in a lot of Cereal.

Here is another good recipe I've been using:

Take any pkg of frozen fruit . Peaches, cherries , strawberries add two containers of same flavored or vanilla yogurt. Add 1 tbs sugar or honey. Dump all intp food processor and process until smooth. Tastes decadent but it's not.

At about $2.30 a serving (including all ingredients) I have Uncle Sam's Cereal, with "Just Tomatoes" brand:
organic bananas, and raspberries or apricots (they are all freeze dried and crispy) with some milk or water (you could use hemp milk or soy milk) and some toasted sliced unsalted almonds.

Cheap, delicious, and full of fiber, has vitamins a, c, potassium, e, high protein (the cereal has flax seeds and wheat germ) as well as Omega 3s. No sweeteners of any kind are added. No honey, sugar, corn syrup, nothing. But it tastes sweet-ish because of the dried fruit.

All are available from my local Whole Foods, but I get the cereal and almonds cheaper at at Trader Joe's.

I have that for lunch about 2 x a week at work (none of the ingredients require refrigeration so easy to transport in the 120 degree car (ok so it was only that hot one day in my car, but still))

Hey I've never tried Uncle sam's . I will look for it. I despise the fact the so many "health" foods in the store have High Fructose Corn syrup and partially hydrognated oils. That stuff is poison. High Fructose just makes you crave more sweets and I am convinced that is why there is so much obesity and diabetes in this country.

I'm also into trying to rid myself of the high fructose - not easy to do.

These recipes sound great - thanks all.

Does anybody else have a bread maker? I use mine all the time. But lately the loaf caves in in the middle. I only make whole wheat bread so I am trying to figure out what is going on. It rises up nice but then caves in.

I have a bread maker and use it a lot! I have never had that problem. Do you have a booklet with a troubleshooting page? I bet you could find out on-line what is wrong.

Here is an outstanding recipe for Tuscan Lemon Chicken I found on Martha stewart's website via watching her prepare it on TV show. It is so easy and seriously some of the best chicken I have ever had! It pairs very well with the simple arugula salad, I did not make the orzo, instead I just made rice.
